Mia Fresco was built on a simple premise, let customers craft their own food using an abundance of fresh ingredients. With the founder being tired of being held hostage to dissatisfying combos, he decided to take his idea and make it a reality which was to allow people to make a salad, wrap, soup or rice box any way they wanted.

"What can I say? It was an idea that eventually became a reality. Planning to open the first in Toronto and ending up in Albany, New York is a bit crazy but it seems to be working. My obsession with perfection, cleanliness and standards will permeate through the brand and offer customers an environment that they can feel comfortable in eating delicious food that they created. They are the mastermind and the chef!"
